Week 14 Cheeseburger Pasta

Instead of Hamburger Helper make your own!


Cheeseburger Pasta 

Ingredients:


1 lb lean ground beef or ground turkey

1/2 tsp garlic powder

1/2 tsp salt

1/2 tsp onion powder

16 oz pasta

8 oz cream cheese

12 oz sharp cheddar cheese

3/4 cup milk

Instructions

  • Cook pasta per package instructions.
  • While pasta is cooking, brown the hamburger meat in a large skillet, breaking it up as it cooks. Once it is done, drain any excess grease and return the meat to the skillet.
  • Add the cream cheese and cheddar cheese to the meat and stir until it is melted and combined.
  • Slowly add the milk while continuously stirring to make a sauce.
  • Add the cooked pasta into the sauce and stir to coat. Serve immediately. Enjoy!





Week 13 Churros NAILED IT!

Churros! Who doesn't love a good churro? Especially a Disneyland Churro?

Thankfully during this quarantine time, Disneyland decided to release a lot of their most coveted recipes!! So we are going to play a game of..."NAILED IT!!"

Equipment

  • Stove
  • saucepan
  • Bowl

Ingredients

  • 1 cup of water
  • 8 tablespoons butter
  • ¼ teaspoon salt
  • ¾ teaspoon ground cinnamon divided
  • 1 ¼ cups all-purpose flour
  • 3 eggs
  • 1 ½ cups vegetable or canola oil
  • ½ cup of sugar

Instructions

  • Combine water, butter, salt, and ¼ teaspoon cinnamon in 1 ½-quart saucepan over medium heat. Bring the pot to a rolling boil. Reduce heat to low.
  • Add flour and stir vigorously until the mixture forms a ball. Remove from heat and let rest for 5-7 min.
  • Add eggs, one at a time, and stir until combined. Set aside.
  • Heat oil in a medium skillet or 1-quart saucepan over medium-high heat or until temperature reaches 350˚F.
  • Spoon dough into a piping bag fitted with a large star tip. Pipe 1-inch strip of dough over the saucepan, cut with a knife and drop into the hot oil. Repeat until churro bites fill saucepan with room to fry.
  • Fry churro bites until golden brown. Remove with a slotted spoon or mesh spider strainer.
  • Drain churro bites on paper towels.
    8. Mix sugar and ½ teaspoon cinnamon in a medium bowl. Toss in churro bites until coated. Place on serving plate and serve with favorite dipping sauce.

Week 12 Butter Dip Buttermilk Biscuits

Butter Dip Buttermilk Biscuits

This recipe is so easy for kids to make and enjoy!

Ingredients

  • 1/2 cup salted butter 1 stick
  • 2 1/2 cups all-purpose flour
  • 1 1/2 tbsp granulated sugar
  • 1 1/2 tbsp baking powder
  • 1 1/2 tsp salt
  • 1 3/4 cup buttermilk

Instructions

  • Preheat oven to 450F degrees.
  • In a microwave-safe bowl (or you can use the baking dish that you'll be baking these in if it's microwave-safe), melt stick of butter in the microwave.
  • Put melted butter into an 8x8 baking dish.
  • In a medium bowl, mix together the flour, sugar, baking powder, and salt.
  • Pour in the buttermilk. Stir until a loose dough forms. The batter will be a bit sticky.
  • Pour biscuit dough into a baking dish (right on top of the melted butter.) Some of the butter will run over the top of the dough, that's perfectly okay.
  • Cut the dough into 9 squares. This will help with cutting later when they are done too.
  • Bake for about 20-25 minutes, rotating dish once during baking.
  • Oven times do vary since different ovens have different hot spots, but basically, biscuits should be golden brown on top and spring back to the touch.

Notes

If using unsalted butter, be sure to add 1 teaspoon of salt.












Week 11 Award-Winning Chocolate Chip Cookies


Award-Winning Chocolate Chip Cookies

This recipe calls for pudding in your cookies. The pudding gives the cookies a perfect texture. Your cookies will be fluffy, chewy and crispy.

Ingredients
·       2-1/4 cups all-purpose flour
·       1 teaspoon baking soda
·       1 cup butter (2 sticks), softened
·       3/4 cup packed brown sugar
·       1/4 cup white sugar
·       1 (3.4 ounces) package instant vanilla pudding mix
·       2 eggs
·       1 teaspoon vanilla extract
·       1 cup semisweet chocolate chips
·       1 cup milk chocolate chips

Directions
  1. Preheat oven to 350 degrees. SIFT (using a mesh strainer) together with the flour and baking soda, SET ASIDE. Use a new bowl for the next step.

  1. In a large bowl, cream together the butter, brown sugar, and white sugar. Beat in the instant pudding mix until blended. STIR in the eggs and vanilla. Blend in the flour mixture. Finally, STIR in the chocolate chips. Drop cookies by rounded spoonful onto ungreased cookie sheets.

  1. Bake for 10 to 12 minutes in the preheated oven. Edges should be golden brown

My daughter got creative and added an OREO cookie in the middle.
